#StacysSweetEggs - Dark Chocolate Blackberry Collagen Crepe - Plus a Gut Health Filling

The verdict is in.

According to my little Instagram Story Poll .. 98% of you want MORE #StacysSweetEggs creations!! But hold up ... who is that 2% .. I wanna know, lol!

Everyone loved the Mixed Berry Collagen Crepe I posted the other day so thought I'd do another one!

This is a tad different as it uses a different flavor of Collagen Peptides! Reviews coming in are proving this is a FAVORITE flavor of VITAL PROTEINS users!

This crepe recipe also has a special GUT HEALTH filling and unlike the Mixed Berry Collagen Crepe .. for this one I used a little bit of coconut flour to make it more of a pancake texture instead of a thinner crepe! But I'm still calling it a Crepe .. cause pancakes should never be this flat and crunchy, lol! Call it what you want .. either way .. it's delicious and so good for you!

Here is the Dark Chocolate Blackberry Collagen Crepe recipe! I hope you enjoy!

Oh and breakfast of course isn't complete without some frothy GUT HEALING COFFEE on the side.



Crepe Ingredients:
*5-10g (or about a 1/2 scoop) of Dark Chocolate Blackberry Collagen Peptides
*1 tsp (1-2g) of coconut flour *this is optional .. just makes crepes fluffier and more of a pancake texture.
*5 tablespoons (76g) of Pasteurized Egg Whites (the kind in a carton)

Filling Ingredients:
*Blackberries (amount up to you)
*Nancy's LowFat Cottage Cheese (I used 1/4 of a serving. Doesn't take much. I only use this brand because of GUT HEALTH!!! It is loaded with tens of billions of LIVE bacteria per serving. Read about why their cottage cheese is different .. HERE.)
*1tsp unsweetened cocoa powder (I use the NEW one from Trader Joe's)
*Stevia (if you prefer sweeter)

What To Do:
For Crepe:
Combine the ingredients and stir really well with a whisk or fork
Add 1/2 of your berries to the batter
Pour batter in a small skillet on medium heat -- you can pour it all at once to make more of a pancake texture or split it up into two and make more of a thin crispy crepe style texture.
For Filling:
Mix together all ingredients ... that is it.
