Super Snacks: Healthier foods for your Superbowl Party

Hey Fit Fam,

Back on NYE my husband and I decided to do something we have NEVER done before. We stayed at home and invited a couple of close friends over.

We wanted to keep things low key and I also wanted to be in charge of the snack table :) It was really nice to have a low key night!




But even better that I was totally in charge of the food! I decided to modify everything to be either totally clean or at least a little bit cleaner! I am one of those people that is bad with snacks. I can't stop, lol. So it made me feel a little better about my binge snacking!



Here is most of my menu and how I modified each recipe!  Maybe it will give you some ideas for the Katy Perry Concert this weekend .. umm .. I mean your Super Bowl party! Go team, lol :)

Baked Sweet & Red Potato Skins

I just cut red and sweet potatoes into slices. Not too thin .. not too thick! Sprayed a cookie sheet with olive oil spray. Laid the potatoes in a single layer. Sprayed with more olive oil spray. Baked for 15 min. Flipped. Baked for another 10-12 (watch them so they don't burn). Then on the reds I put hidden valley bacon cheddar seasoning (this is new and with the ranch seasoning they have), a sprinkle of 2% cheddar cheese and a little center cut or turkey bacon! Put back in the oven for a few more minutes. On the sweet potatoes I just sprinkled some cinnamon and put back in the oven for a few. You could do some stevia if you want as well. That is it! Oven temp for my oven was the same I use for sweet potato fries --  425.  I also made some "healthy dips" for these! For the sweet potatoes I put some cinnamon and stevia in some Vanilla Carbmaster yogurt (I actually do this daily and eat it with things like my mug muffins or nightly 1st phorm waffles). Then for the reds, that is just some light sour cream!

Shredded Salsa Chicken
I put a container of salsa and a few pounds of chicken breasts in the crock pot. Cooked on high for a few hours then turned down to low and cooked all day. I used two forks to "shred" once it was done and stirred it up .. done :) I served this with thin yellow tortillas, tomato, guacamole, black beans and 2% cheese on the side, so that people could make their own tacos!

Baked Scoops/Low Fat Corn Chips/Veggies, served w/ healthy dips

They have great low fat corn chips at Trader Joe's! The baked ones are just Lay's brand! I served them with more salsa and guacamole and some low fat homemade spin dip! The low fat spin dip was just spinach, hidden valley spin dip mix and fat free cream cheese. Honestly .. this was just "okay". Knorrs has a better spin dip mix .. but it has gluten in it :-(  There are a gazillion other lower cal spin dip recipes online. Not sure why I didn't like this one .. maybe too much cream cheese? I need to try it again! I think I have several more on my PINTERST boards if you want to check those out!

Fruit with yogurt dip

Fruit of choice. Then for the dip I made the yogurt dip out of Kroger Carbmaster Vanilla Yogurt, some PB2 and unsweetened cocoa powder! You could also do a light Greek Yogurt if you prefer.






Healthy BBQ JalapeƱo Turkey Meatballs

These were AMAZING!!! I used 93/7 Lean Ground Turkey. I would rather have used 99% but my hubs convinced me to use the one with a little more fat. Next time, I think I'll compromise and do 1lb of each :)
1 jalapeno seeded and diced
1/34 to 1/2 cup cilantro
1-2 eggs (you could also use an egg and an egg white I'm sure)
salt, pepper, diced onion and garlic - to taste

Mix everything in a large bowl. Roll into balls and put on a sprayed cookie sheet. Bake for 20-30 min or until done at 425. Then toss in your favorite bbq sauce. I tossed in a pan on the stove so they stayed warm until ready to serve. Be careful with condiments!! Most bbq is OFF limits cause it's FULL of sugar and carbs! I have only found 2 brands that are 6 carbs or less. Just be a label reader!

Okay and because everything in moderation.  We also had some bad treats. We had some adult beverages and I made CHAMPAGNE jello shots!!! You make these just like regular jello shots, except use champagne and plain jello. You could probably use flavored, but I wanted the champagne taste to be stronger! I sprinkled some colored sugar in them for extra sweetness and presentation and also dropped some strawberries in a few of them as well!

I have a few other recipes pinned throughout my Pinterest Boards! Some I've tried .. some I haven't. I think it's a fun challenge to take all these yummy foods you see and modify them to make them cleaner! What are your favorite modified party foods?
