No Muffin Top 2-Min Muffin Creations: Recipes For Apple Pie, PB&J and Pumpkin Banana

Hey Fit Fam ...

I got a lot of people asking me for my PB&J muffin recipe after I posted a pic of my breakfast on Monday. I have a feeling when I post today's creation on Instagram I'll be getting the same request. So I figured I'd write up a little entry for you!

I always follow the EXACT SAME base in all of my muffins and pancakes.  For those of you that get tired of the clean eat staple of "Oats and Egg Whites" everyday -- THIS is a solution!! There are many .. but using those two ingredients to make muffins is my favorite, fastest and less messy!  I just have different "add ins" to make it different each day!  Here is a link to my BASIC BATTER BASE and a link where I talk specifically about my 2-Min Muffins :)

But so you don't have to go back and search ... I'm going to write up the recipe up for my 3 most recent 2-Min Muffins. But as always my recipes are under the RECIPE tab here on the blog!! Each of these recipes yields a SINGLE serving :)

Here ya have it ... some NO Muffin Top forming (haha) breakfast (or anytime) "Muffins" :)




PB&J 2-Min Muffin

Basic Batter +oats
* Egg Whites (amount depends on your individual needs) I would say no less than 2 egg whites. I use anywhere from 3-5 depending on what I'm allowed at the time.
* Old Fashioned Oats (you will ground these into oat flour. I use a magic bullet. Again .. amounts vary. Use what you are allowed to use)
* Baking Powder (I don't measure .. but it's probably 1/8 of a tsp or so)
* 1 packet of Splenda or two good squeezes of the liquid kind
* Little bit of Vanilla or Butter Extract (optional)
* Protein Powder of choice (Optional. I don't use this ...but my husband does for his)

For this creation you can add:
* PB2 powder (Optional. I don't usually use this ..... but if so I never use the full suggested serving size. I use about the same amount as I do of the baking powder)
* Blueberries (however many you want - but of course I never suggest more than ONE serving of fruit)
* Cinnamon (optional) - I add cinnamon to every breakfast creation!
*Peanut Butter  -- Whatever amount you are allowed. If you can't have PB on your plan this is where the PB2 can come in handy!

Put all dry ingredients in magic bullet and blend (I do this the night before so it's ready)
Put in any kind of ceramic bowl, mug, etc.
Add egg whites and stir!
Pour in blueberries (or whatever fruit you desire)
Microwave 1 min .. check on it .. microwave about 1 more min...watching and checking on it! Sometimes I turn mine over after the 2nd min and heat a tad longer because the underneath is a little mushy still.
Immediately top with peanut butter so it "melts" onto the muffin!

I transfer mine to a container I can throw in my bag and then eat it when I get to work! You can also add other toppings of your choice -- maple syrup would be delish on this!


Apple Pie 2-Min Muffin
Basic Batter +oats
* Egg Whites (amount depends on your individual needs) I would say no less than 2 egg whites. I use anywhere from 3-5 depending on what I'm allowed at the time.
* Old Fashioned Oats (you will ground these into oat flour. i use a magic bullet. Again .. amounts vary. Use what you are allowed to use)
* Baking Powder (I don't measure .. but it's probably 1/8 of a tsp or so)
* 1 packet of Splenda or two good squeezes of the liquid kind
* Little bit of Vanilla or Butter Extract (optional)
* Protein Powder of choice (Optional. I don't use this.. but my husband does for his)

 For this creation I added
* Nutmeg - to your liking
*Allspice or Apple Pie Spice - to your liking. Either would work and I've left it out and just done nutmeg and cinnamon and tastes the same.
* Cinnamon - to your liking
* Diced Apple -- I put it in a pan w/a little waldens farms (or brand of your choice) caramel and/or maple syrup. Cook the apples. I did this the night before
. You can also just throw them in the batter before you microwave!

 *JIF Whips Maple/Brown Sugar Peanut Butter -- whatever amount you are allowed. If you are not allowed PB this is where the PB2 Powder may be a good option. But honestly the PB is what makes it.

Pour in blueberries (or whatever fruit you desire)

Sprinkle a little more cinnamon on top. Immediately top with peanut butter so it "melts" onto the muffin!

You can also add other toppings of your choice -- I don't have any .. but I bet that the Splenda Brown Sugar would be excellent on top of this!  Maybe some crushed nuts if you wanted to 1/2 your serving of peanut butter and do 1/2 nuts and 1/2 nut butter!



Pumpkin Banana 2-Min Muffin

Basic Batter +oats
* Egg Whites (amount depends on your individual needs) I would say no less than 2 egg whites. I use anywhere from 3-5 depending on what I'm allowed at the time.
* Old Fashioned Oats (you will ground these into oat flour. i use a magic bullet. Again .. amounts vary. Use what you are allowed to use)
* Baking Powder (I don't measure .. but it's probably 1/8 of a tsp or so)
* 1 packet of Splenda or two good squeezes of the liquid kind
* Little bit of Vanilla or Butter Extract (optional)
* Protein Powder of choice (Optional. I don't use this but my husband does for his)

 For this creation I added 
*Nutmeg - to your liking
*Allspice - sometimes I leave this out. great either way.
*Cinnamon - to your liking

*Allspice - I am out. But I would have added this if I had it.
*Sliced Banana

*JIF Whips Maple/Brown Sugar Peanut Butter

For this recipe -- I usually just slice up the banana and have a bite of banana with each bite of muffin. But I tried putting chunks of a really ripe one IN the batter before microwaving it and it was DELISH!!! It would also be really good to cook the banana in a pan with some sf maple syrup, like I do when I use my Basic Batter Base to make pancakes or waffles! It's SO good!

For any of these 2-Min Muffins .... Depending on your oat/egg ratio they may not be "batter" consistency. It could be VERY watery! Don't worry -- it fluffs up to a big ole mound of goodness!!!
