Super Skinny Pizza "Pasta" Casserole

Hey Fit Fam ...

Continuing on with more ideas for some major SUPER snacking this weekend! This is another recipe that calls for my favorite "bulk" health food .. MIRACLE NOODLES!!! I use these in TONS of my recipes. I am not a "low carb" dieter .. in fact I always emphasizes the importance of eating the right carbs. But replacing these in my dishes allows me to get my carb source from other places! That is why I call it one of my favorite "bulk" foods. You can have SO MUCH of it for virtually ZERO macros!

SUPER BOWL SKINNY RECIPE #2 -- This one is SUPER skinny, basically no carb and uses my favorite macro saver .. MIRACLE NOODLES! If you don't have any of theses amazing noodles you can order HERE. You may not get them in time for your super bowl party on Saturday .. but go ahead and get them so you are prepared for your next "pasta" craving and so you can make some of my yummy recipes .. many call for MIRACLE NOODLES!


SUPER SKINNY PIZZA "PASTA" CASSEROLE

** 2 pkgs Miracle Noodles (Cooked based on instructions)
** 1 (16 oz.) package extra lean or 93/7 ground turkey
** 1 jar marinara spaghetti sauce of your choice (I am always on the hunt for the MOST macro friendly spaghetti sauces. Make sure you READ THAT LABEL and serving size. Many of theses sauces have TONS of carbs and some fat too. I've found several with 4c or less per 1/4 cup serving) 
** 1/2 yellow onion, chopped
** 1/2 medium sized green, red or yellow pepper, chopped
** 1 cup bella mushrooms, sliced
** 1 (14.5 oz.) can diced tomatoes
** 3 cups shredded Mozzarella cheese. I ONLY use Trader Joes LITE Mozerella. The Macros are Uh-Maze-Ing :) :)
** 1 package turkey pepperoni slices
** Seasonings of your choosing (Italian, pizza, garlic salt, etc.)

HOW TO MAKE:
1. Cook Miracle Noodles according to directions and set aside.
2. Brown ground turkey in a large pan. Drain well. Remove from pan and set aside.
3. Cook chopped onions, peppers, and mushrooms in olive oil spray. Once softened, add the can of diced tomatoes, ground turkey, and marinara sauce. Place noodles into a large bowl ... then add and thoroughly mix in the sauce, meat and veggies.  Add spices to taste and pour into a greased pan (I spray with olive oil spray.)
4. Sprinkle 3 cups of Mozzarella cheese on top and add pepperoni along the top layer.
5. Bake at 350ºF for 25-30 minutes. Serve immediately! ((You can make ahead and heat up just before serving.))
