Super Skinny Low Carb Pizza "Pasta" Salad

Hey Fit Fam ..

Super Bowl Sunday is just around the corner! Why do YOU watch the big game? Is it to root for your favorite team? Because you love sports? To watch the performances? ((who else is wondering if Jay Z will be one of the "surprise" guests ... considering his wife Queen B is set to perform and he does have a collaboration the headliner Coldplay?)) What about the commercials ... any guesses as to who will have the most memorable advertisement this year?! Or is it for ... THE PARTY! If you are hitting a Super Bowl party or throwing one of your own, then FOOD is certainly on your mind! I've got ya covered if you are trying to figure out a healthy spin on your favorite party food!

I have SEVEN recipes for you here in the recipe section of my blog. First up ... one that will please both your pizza loving friends and all those "low carbers" as well! It uses my favorite low carb bulk food ... MIRACLE NOODLES!!!!

SUPER BOWL SKINNY RECIPE #1 -- This one is SUPER skinny, basically no carb and uses my favorite macro saver .. MIRACLE NOODLES! If you don't have any of theses amazing noodles you can order HERE. You may not get them in time for your super bowl party on Saturday .. but go ahead and get them so you are prepared for your next "pasta" craving and so you can make some of my yummy recipes .. many call for MIRACLE NOODLES!

**Low Carb Pizza "Pasta" Salad **

"Pasta" Salad Ingredients:
2 pkgs of Miracle Noodles of your choice (I have blogged about these magic no/low carb noodles before. They are truthfully a MACRO MIRACLE. I eat them almost daily so I can save my carb macros for other yummy foods.) 
½ pint of cherry tomatoes, cut in half
5 oz turkey pepperoni slices, cut in half
1 Red, Yellow or Green Bell pepper - seeds removed & diced.
3-5 laughing cow light swiss cheese triangles ((If you don't care about upping the fat content you can use 8 oz. low fat mozzarella cheese cut into small cubes))
Diced Red Onion (to taste)
Diced Banana Peppers (Optional. I love banana peppers so I add tons)
Olives (Optional. I hate olives. So negative for me on these)
Garnish with fresh basil (Optional)
Garnish with crushed red pepper (Optional)

Homemade Italian Dressing Ingredients: ((you may need to make another batch of this if it's not enough flavor for you))
4 tablespoons of extra virgin olive oil ( EVOO )
12 dashes of  red wine vinegar
lemon juice from one lemon
Italian seasoning  (to taste .. 4 shakes or so)
garlic salt (to taste .. 4 shakes or so)

*** OR you can take the easier route and just pick up some macro friendly (lite - low fat) italian salad dressing at the grocery store :) For this recipe I would go with a zesty not creamy.** 

HOW TO MAKE:
** Cook the Miracle Noodles according to the package. Set aside.
**In a large mixing bowl add the tomatoes, turkey pepperoni, peppers and cheese. Add the pasta once it is cooled.
** Combine the olive oil, red wine vinegar, lemon juice, seasonings. You can do this in a food processor (I use my little ninja) or you can just put it in a salad shaker, mason jar, martini glass, etc., and just give it a good shake!
** Pour half+ of the dressing over the pasta salad, combine until dressing is covering the pasta salad and refrigerate the salad overnight or at least 2 hours for the flavors to combine.
** Remove the refrigerator and taste the salad, adding more dressing to taste.
