Super Bowl DRUNKEN Guacamole

Hey Fit Fam ..

Sometimes we just have to splurge a little and Super Bowl Sunday is a day that many of you will do just that! If you don't mind a few extra Macros (from tequila and orange juice) then skip my healthy essential oil guac and go for this DRUNKEN GUACAMOLE! You heard me right! Hey .. the punch isn't the only thing that has to be spiked at a party!

You can use essential oils in this one as well! Which would actually cut down some macros from the orange juice. However there is so little orange juice in this recipe it's not really worth counting ;)

SIMPLY STACY'S DRUNKEN GUACAMOLE 

INGREDIENTS
4 ripe avocados
2 tbs lime juice or 4 drops doterra lime oil
1 tbs orange juice or 2 drops doterra wild orange
3 tbs quality tequila (i prefer don julio reposado)
2 cloves of minced garlic (or the kind in the jar that I personally love)
3 tbs minced red onion
2 tsp minced serrano peppers
2 tbs finely chopped cilantro or 1-2 drops doterra cilantro oil
1 tsp sea salt
1 tsp black pepper

HOW TO MAKE:
In a large bowl place the scooped avocado pulp, lime, orange and tequila and mix to coat well.
If there is any ... drain, and reserve the juices after all of the avocados have been coated.
Using a potato masher, pastry blender, or even a fork - add the salt, cumin, and cayenne and mash. Then, fold in the onions, jalapeno, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved juice. If none is left and you feel it needs more flavor .. just add a little more lime juice/oil .. or tequila .. yea .. tequila :)

If you are feeling lazy you could put everything in a food processor and zap it a few times! I just prefer my guacamole chunky .. so I do it by hand!

Let sit at room temperature for 1 hour and then serve with Baked Scoops, Trader Joe's Reduced Guilt Tortilla Chips, Veggies, etc!
