SUPER Soft Chocolate Chip Protein Cookies

Hey Fit Fam ..

Here is a SUPER sweet one for your Super Bowl party .. or maybe just post workout if you are like me and skipping all the football festivities!

I don't bake all that often but when I do this is one of my favorite Protein Chocolate Chip Cookie recipes! You can experiment with different protein flavors and add-ins to get different cookies other than chocolate chip! Get creative based on your favorite flavors! 1st Phorm Chocolate Coconut with chocolate chips and coconut flakes is AMAZING! So is Vanilla Level 1 with Muscle Egg Cake Batter and Fruity Pebbles cereal :) You get the idea!

** SUPER Soft Chocolate Chip Protein Cookies ** 

INGREDIENTS:
1 scoop 1st Phorm Level One Vanilla Protein Powder (I can NOT vouch for many other protein powders and the wrong protein powder will destroy this recipe. You can get 1st Phorm at www.1stphomr.com or in Nashville you can get it at Mid10 Nutrition. If you are going to attempt another brand make sure it's a blend and NOT just a solid whey. It won't work.) 
1/2 c canned white beans (chickpeas, garbanzo, navy) rinsed and drained
1/4 c canned pumpkin (you can also used mashed banana if you don't have pumpkin)
3 T egg substitute or Muscle Egg Flavored Egg Whites - cake batter, vanilla, chocolate are all great in this one. 
1 t vanilla extract (can omit if using muscle egg, but doesn't hurt to still keep it in)
1/2 t baking powder
2 T chocolate chips (I use Lilly's brand that I bought on VITACOST ... the macros are unreal and can make a HUGE difference in your carb/fat count.)
3-5 packets of sweetener of choice. I use Stevia or a blend of different types of Stevia. I often also use a mix of packets and liquid.

HOW TO MAKE:
Drain and rinse beans
Puree beans, pumpkin, egg, and vanilla. Add extra egg or even a little unsweetened vanilla almond milk if needed to get the right texture.
Stir in the rest of the ingredients.
Drop batter onto cookie sheet lined with baking/parchment paper.
Bake at 350 for 8-10 minutes. DO NOT OVER BAKE or they will be DRY and YUCKY :)

Eat Clean. Train Dirty.
