Brown Rice Tortilla Pizza

Hey Friends ....

I love pizza .. so much. I have celiac disease so finding a great pizza isn't the easiest. However now that Domino's makes one it's as easy as a phone call or click of the mouse!  Also a really good local pizza place that offers GF is just down the road from us.

We made a meat crust pizza not long ago that was SO GOOD and overall pretty clean.  I really recommend trying it if you are craving pizza and are hungry! But if you want just a light snack -this is one of my favorite "semi-clean" pizza craving stoppers!

Food For Life Brown Rice Tortilla (I get them in the freezer food section at Whole Foods)
Pizza Sauce (I use a lower sugar/cal one)
Low Fat Shredded Mozzarella Cheese ( I used as little as possible but till covered the tortilla)
Toppings of your choice (I used low fat turkey pepperoni and banana peppers. Healthier options would be something like grilled ckn with the buffalo sauce I use in our Buffalo Chicken Burgers)

Bake at 350 until Tortilla is cooked and crispy and cheese is melted! I think I put it in about 10min. I put mine on a cookie sheet. Have also used aluminum foil in the past. It is a little too thin to put straight on the rack.

The tortilla is pretty thin. So don't expect to get too full. But really does taste like pizza!!
