#SaturdayStack - Quinoa Pancakes

Hey Fit Fam ...

As I told you yesterday, I typically have the same thing for breakfast every day. One serving of oats w/flax and a scoop of protein (at least 25-30g) mixed in ... and a cup of coffee! If I'm on the go and not in the office, I'll have a Think Thin bar and coffee. But on weekends I try to break away from the norm at least one day and have Protein Pancakes! This is a phenom in the "fit fam" social media, hashtag world known as #SaturdayStack .. or #SundayStack :)

My husband and I have tried a gazillion different recipes, different flours (coconut, oat, etc), even no flour and all kinds of different protein powders.  I never like to use regular flour (which has to be GF for us since I have celiac) because it just adds calories that aren't clean. Well .. today I think we did it! Our healthiest, tastiest, highest protein pancakes yet! The secret ingredient .. Quinoa Flour!!!


Quinoa is so good for you. A "good carb" and a decent source of protein too. I love quinoa, quinoa chips, quinoa pasta - but have never tried quinoa flour! I read that cooking with it has a bitter taste. So I was worried .. but was pleasantly surprised! They weren't bitter at all!

We got the Quinoa Flour at Kroger ... it was about 11 bucks. So it's not cheap but totally worth it! We had it with eggs and turkey sausage.

RECIPE
1/2 Cup Quinoa Flour
2 Scoops of Protein Powder of your choice (We used NLA For Her Vanilla Cupcake today. But I LOVE using a strawberry protein too)
1/2 tsp baking powder
Approx 3tbs of Unsweetened Vanilla Almond Milk (more if too dry)
6oz container of vanilla greek yogurt
2 Jumbo eggs (I would have preferred to use egg beaters but wasn't home and my husband made them, ha. If you have regular eggs that would be 3 regular eggs)
1/2 tsp Vanilla Extract
Cinnamon (optional)
Stevia (optional. my protein powder has it in it already)

We just sprayed olive oil spray to coat the pan. But you could also melt a little bit of coconut oil and cook them in that!  Top with whatever you choose! I had a little sugar free syrup! ENJOY!!!

Protein powder, quinoa and greek yogurt?!?! Talk about a high protein, muscle feeding start to our day!! What is your favorite HEALTHY pancake recipe!? I'd love to know!
